Usually I put most of it back but this time he insisted on getting a bag of cubed sweet potatoes. I usually buy them whole, but had an ah ha! moment: They would make perfect appetizers for our Kidtastic New Years Eve party! Yummy Sweet Potato Bites 11 of 11
Sweet Potato Bites Recipe
2 large sweet potatoes peeled and cut into 1 inch cubes
1 tablespoon brown sugar
1/8 teaspoon cinnamon sugar
sea salt and pepper
Preheat oven to 375 degrees. Place cubed sweet potatoes on a rimmed baking sheet and drizzle with olive oil. Cook for 25 to 35 minutes or until soft and starting to brown. Remove from oven and divide sweet potatoes into 3 equal parts. Sprinkle 1/3 with sea salt and pepper, another 1/3 with brown sugar and cinnamon, and place toothpicks into each. With the final 1/3 stick a mini marshmallow on a toothpick followed by a cube of sweet potato. Place the marshmallow and sweet potato skewers into the oven for 2 minutes or until marshmallow just begin to melt. Remove from oven and serve on a tray.
