This healthy lunch recipe is a sweet potato or hummus lovers dream. This light and lovely afternoon snack will leave you feeling fabulous. Kids will enjoy the creamy sweet hummus and friendly green apple – remove the onion if need be – sub with more apple, crunchy carrots, fun frizzy sprouts or salad greens (so many veggie toppings mesh well with these flavors.)
Sweet Potato Hummus Apple Tartine
makes two slices
2 slices whole wheat sourdough – or another toasted bread
4-6 Tbsp sweet potato hummus
1/2 green apple, thinly sliced
1/2 small red onion, thinly sliced
1 tsp olive or grape seed oil
pepper to taste
Slather toasted bread in hummus. Add the apple, onion and drizzle of oil.
