Sweet Potato Jewels

Sweet Potato Jewels recipe for kids

Serving Size:

Serves 8-10

Ingredients:

  • 5-6 small sweet potatoes, scrubbed
  • zest and juice of 1 orange
  • 1/4 teaspoon salt
  • 3 tablespoons butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup mini marshmallows

Method:

Pierce potatoes, and place in a 375 degree oven. Bake for 45-60 minutes, or the flesh is fork tender and pulls away from the skins.

When potatoes are cool enough to handle, peel the skins off and slice potatoes into 1 inch thick medallions. Place in the bottom of a baking dish. Sprinkle with salt, orange zest and orange juice. Cover with butter, brown sugar, and spices. Bake for 20 minutes, or until butter is melted. Sprinkle with marshmallows, and bake for 5 minutes more, or until golden brown.
