Sweet Summer Tomato Roasted Garlic Hummus

This Sweet Tomato Roasted Garlic Hummus really made my lazy weekend day. I whipped it up and paired with some pita chips and veggies for instant snacking fun. Normally I make a delicious Sun Dried Tomato and Basil Hummus. But I was out of basil. So instead I made this pure tomato hummus accented with sweet creamy cloves of roasted garlic. The flavor was sweet and bright with mellow tones of that warm garlic. Lots of grassy extra virgin olive oil too. So if you are out of fresh basil too – give this coral-colored tomato hummus a whirl!

This recipe produces a sweet and savory dip that is bursting with a fresh tomato flavor. Add in the sweet mellow roasted garlic for a caramelized accent that is intoxicating. Pair this creamy hummus with grilled pita bread or fresh chopped veggies for a healthy dip snack or appetizer!

This recipe is packed with protein and fiber from the beans. Add some veggie sticks and this snack gets even healthier.

Sweet Summer Tomato Roasted Garlic Hummus
makes about 3 cups, vegan

1 can white beans, cannellini
1 can garbanzo beans
1/2 cup sun-dried tomato strips- pure state – no oil (bagged)
1/2 cup lemon juice or 1/4 cup apple cider vinegar
2 Tbsp maple syrup
8 cloves olive oil-roasted garlic (roast in oven until soft and creamy)
3/4 tsp truffle salt (or sea salt)
1/3 cup olive oil (add more or less to suit your preferences)
1 handful fresh tomato – diced or mini tomatoes
1 heaping scoop of tahini
fresh pepper

tip! Make sure the sun dried tomatoes you buy are nice and soft. I like the soft bagged strips. Hard or too-dried-up tomatoes will not blend well – and may need re hydration in water or lemon juice. You could use the oil packed tomatoes if you prefer. Or if you have time – make some yourself.

To Make:

1. Drain the excess liquid from the cans of beans. Roast your garlic in the oven with some EVOO and sea salt.
2. Add all ingredients to your blender of food processor.
3. Pulse and blend until creamy – thickness to your preferences.
4. Do a taste test and adjust ingredients as desired.

serve! I like to pour some warm EVOO over top so the hummus gets slightly warmed as well.
