Take a Trip To Greece Without Leaving Your House! Greek Isles Pasta Salad

I am a sucker for a good pasta salad. Did you happen to catch our 10 SIMPLE SUMMER PASTA SALADS post?  Well we have one more to add to that luscious list.  This Greek Isles pasta salad one uses one of my kid’s favorite pasta shapes butterflies (or bow ties).  It’s bright and beautiful and full of good for you fruits and veggies like cherry tomatoes and spinach. It’s also packed with protein rich chick peas. It’s finished off with a bold vinaigrette and of course Feta cheese. It wouldn’t be Greek without that now would it?

Greek Isles Pasta Salad {Recipe compliments of Athenos}
What you’ll need:
3 cups farfalle (bow-tie pasta), uncooked
2 cups baby spinach leaves
1 cup natural Feta cheese crumbles
1 cup cherry tomatoes, halved
3/4 cup rinsed canned chickpeas (garbanzo beans)
1/2 cup Greek vinaigrette dressing

What to do:
1. COOK pasta as directed on package, omitting salt; drain.

2.PLACE pasta in large bowl. Add remaining ingredients; mix lightly
