Tee and Cakes Blueberry Streusel Muffins

If you’ve visited Boulder, Colorado then you may be familiar with one of our local foodie treasures… Tee and Cakes Bakery. The charming shop located in downtown Boulder offers some of the most creative and delicious sweets around. They became very well known for their inventive cupcake flavors including their famous Chocolate and Bacon cupcakes that were featured on Food Network.

One of my favorite Tee and Cakes treats is their wonderful blueberry streusel muffins. The addition of the brown sugary goodness of a streusel topping puts these muffins in a league of their own. Fortunately, owners Brian and Kim have been very generous in sharing their recipes so you don’t have to fly to Boulder to enjoy one of these muffins. The recipe is simple and you’ll be able to enjoy an world-class bakery goodie in your own kitchen. Full recipe after the jump!

Blueberry Streusel Muffin Recipe

Yield:  12 muffins


  • 12.5 oz all purpose flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • heavy pinch of salt
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 cup plain yogurt
  • 1.5 cups fresh blueberries
  • vegetable spray, for muffin tins


Preheat oven to 350 degrees

In a large bowl sift together flour, baking soda, baking powder and salt. Set aside.

In another large bowl, whisk together the sugar, oil, egg and yogurt. Add the dry ingredients reserving 1 TBSP of the dry ingredients to toss with the blueberries. Stir mixture for a count of 10. Add 1 cup blueberries to mixture and stir 3 more times. Reserve the 1/2 cup of blueberries.

Place muffin liners in the tin. Using an ice cream scoop, fill the tins half full then sprinkle some streusel on top and fill 3/4 full. Sprinkle the remaining 1/2 cup of berries and a bit more streusel on top of muffins and press down lightly.  Place in oven. Bake for 20 to 25 minutes, rotating pan halfway through. Remove from the oven and let cool. Carefully remove from the pans.

Streusel Topping Recipe:

  • 1/4 cup all-purpose flour
  • 4 TBSP butter, softened
  • 2 TBSP sugar
  • 2 TBSP brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 cup rolled oats

To make topping: In a medium bowl, mix together the topping ingredients until crumbly. Chill until ready to use.
