Despite my best efforts, sometimes my cookies stick to the baking sheet. To remove them I have to push and scoop my spatula around the attached buttery disk until it comes off, in shards, in my hand. I never throw away these beautiful pieces of crispy golden cookie, it seems like such a waste to discard perfectly delicious food. Sometimes I keep them in a bowl and nibble on them bit by bit throughout the day, and other times I go all out and make cookie crumble parfaits. The alternating crunchy/creamy layers reminded me of a Carvel cake. When I made them last week they were topped with whipped cream and sprinkles, but sometimes I take it even further and add a drizzle of hot fudge or caramel sauce.
Cookie Crumble Parfaits
Cookie Crumbs – any flavored cookie
Ice-Cream – any flavor
Method: Place a scoop of ice-cream at the bottom of a glass. Top with a layer of cookie crumbles. Repeat process, ending with cookie crumbles. Top with whipped cream and a drizzle of hot fudge if desired.

Wow this is really smart. What do you think of doing a lower-fat version by drizzling mango syrup instead of hot fudge or caramel sauce. You know I am the weight loss guy, I am always looking for ways to eat tasty meals without putting on any pounds lol. If I did not have so many of my friends wind up in the hospital over being over weight, I would not care so much.
