One of the things I love about summer is when people swing by to say Hi and end up staying for cocktails. It’s not unusual for this to happen in our house, especially when parents are picking up their children after a playdate and the weather is so nice the kids just want to keep playing outside. Last year I came up with a strategy for this scenario. I stockpile the ingredients needed for my 30-Second Goat Cheese & Chutney appetizer, and maintain a nice selection of crackers to serve it with. This appetizer is my go-to stress-free party dish that takes, quite literally, 30 seconds to make. I’ve served it for both large and small gatherings and it is always a crowd-pleaser. You’ll definitely want it on hand for the next time you find yourself hosting an impromptu gathering.
30-Second Goat Cheese & Chutney Appetizer
1 8oz. package of good quality plain goat cheese
4 T. good quality chutney, any flavor
Crackers for serving
Serve 6; Double or triple the recipe to serve more
Method: Place goat cheese on a decorative plate or in a shallow bow. Spoon chutney over the top so that it covers the entire log. Serve with a soft cheese knife and crackers so that guests can smear a little bit of goat cheese and chutney on their crackers with each bite.
