While I am at it, I think a recipe for two basic vanilla cupcakes is in order. When would you need just two cupcakes? When your child comes home from school and you want to share a sweet moment with her, perhaps. Or when your spouse comes home from a business trip and you want to host a mini celebration. There are many reasons to serve just two cupcakes! Here is my favorite way to bake up just two cupcakes for your next mini celebration!
Two Vanilla Cupcakes
1 egg white
1 tablespoon granulated sugar
2 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/4 teaspoon baking powder
1 1/2 tablespoons whole milk
1/4 teaspoon kosher salt
1. Preheat the oven to 350 degrees F.
2. In one bowl, whisk together the egg white, sugar, butter and vanilla. Then stir in the flour, baking powder, milk and kosher salt. Mix until smooth.
3. Line a muffin tin with two liners. Divide the batter evenly amongst each liner and bake for 12 minutes, or until the tops of the cupcakes spring back when touched.
4. Allow the cupcakes to cool. Then frost with any extra frosting you have on hand!
