Slow Cooker Rotisserie Chicken
This simple recipe for slow cooker rotisserie chicken is so easy! It takes just 5 minutes to prep, then cooks all day, yeilding an incredibly moist and flavorful bird. Serve with crusty bread and a side salad for a quick, hearty dinner perfect for busy weeknights!

- 1 whole chicken
- 4 tablespoons olive oil
- 1 lemons, thinly sliced
- 1 bulb garlic, coarsely chopped
- salt and pepper
Drizzle 2 tablespoons olive oil over the bottom of a 5-6 quart slow cooker. Drizzle the chicken with the remaining olive oil, salt and pepper the skin very generously. Place in slow cooker breast side up. Add lemons and garlic to the slow cooker. Cover and cook 6-8 hours on low. To brown the top of the chicken, place it under a broiler for 2-3 minutes before serving. Serve and enjoy!
