The Final Four: Beer Cheese Nachos

The Final Four begins April 1st, with the semifinal games being played tonight with Louisville vs. Kentucky and Ohio State vs. Kansas. If you’re a basketball fan or just a beer fan, listen up. You need treats for the game, like beer cheese nachos. They are essential to your basketball watching. The beer-spiked queso will have you double dribbling all through both games tonight and well into tomorrow.

Mario Lopez and Betty Crocker have teamed up to bring you snackable college basketball treats for the Final Four games and your March Madness with beer straight from the Betty Crocker Kitchens. This recipe was voted the second favorite party food recipe from the second annual Betty Bracket, coming in behind only the beer-battered grilled cheese. If you haven’t seen that yet, check it out!

Beer Cheese Nachos

8 cups tortilla chips
1/2 cup lager beer, such as a Boston lager
2 cups shredded American cheese
1 cup shredded mild Cheddar cheese
1 can (4.5 oz) chopped green chiles, drained
1 can (15 oz) black beans, drained, rinsed
1/2 cup Old El Paso® Thick ‘n Chunky salsa
1 medium avocado, pitted, peeled and chopped
1 medium tomato, seeded, chopped
2 tablespoons chopped fresh cilantro

1. Heat oven to 350°F. Line large cookie sheet with cooking parchment paper. Arrange tortilla chips on cookie sheet. Bake 5 minutes to warm chips.

2. Meanwhile, in 2-quart saucepan, heat beer over medium heat until just starting to simmer. Slowly add the cheeses in small amounts, stirring constantly with whisk, until melted. Stir in chiles.

3. In medium bowl, mix beans and salsa. Microwave uncovered on High 2 to 3 minutes or until hot.

4. To serve, pour half of the cheese sauce over warm chips; top with half of the bean mixture. Top with remaining cheese mixture and remaining bean mixture. Sprinkle with remaining ingredients. Serve immediately.
