Pancakes are the perfect fall food. With just the right mix of vanilla, fall fruit, and maple syrup, pancakes beautifully capture all the best flavors of the season. And yesterday, when we got several jewel-toned red bartlett pears in our CSA, I knew I’d be making these airy pear pancakes this morning.
These come together quickly and have a complex flavor, that combines the sweetness of brown sugar and pears, with the tang of yogurt and lime. Impossibly light and airy, these buttery pancakes are just right the moment they come off the skillet.
