I don’t care who you are. Burritos rock bananas. You really can’t go wrong with a tortilla stuffed with good stuff. But, here’s the thing. You’ve never had a burrito like this one. Not only is it absurdly simple to make, it’s so full of flavor that you might cry a little tear while you eat the sheer goodness that is this meal. Topped with obscene amounts of melted cheese, a good bit of hot sauce, and fresh chopped cilantro, this burrito is the best danged thing you’ll have for dinner all week. Guaranteed.
The Ultimate Chicken & Black Bean Burrito
- 2 extra-large flour tortillas
- 1 large chicken breast, cooked and shredded
- 1 15-ounce can black beans, drained
- 1 teaspoon cumin
- 1 teaspoon chipotle chili powder
- 2 teaspoons onion powder
- 1/2 teaspoon salt
- 1 tablespoon white vinegar
- 1/2 cup hot sauce
- 1 cup grated cheese
- 1/4 cup fresh chopped cilantro
- 1/2 cup sour cream
Preheat the oven to 400 degrees. In a large bowl, stir together the chicken, black beans, spices, and vinegar until well-mixed. Zap your tortillas in the microwave until soft (about 20 seconds). Spoon the chicken & black bean mixture into the center of each tortilla. Tightly roll the tortillas burrito-style, then transfer to a baking sheet which has been lightly coated with non-stick cooking spray. Top each burrito with hot sauce and grated cheese. Transfer to the oven and bake until the cheese is melted and bubbly, about 10-12 minutes. Remove burritoes from the oven, top with cilantro and serve with sour cream. Enjoy!
