Chicken mole is one of my favorite traditional Mexican dishes. It is rich and full of flavor and makes for wonderful comfort food. And, even with all that flavor, the dish can be still prepared in a very healthy way! Many traditional recipes for mole can take days to prepare, but this recipe is quick and easy to throw together and uses the slow cooker to simplify the preparation. It also does not have much heat, so kids can enjoy it along with the adults.
We all know how much Timon and Pumbaa love hanging out in the mud. The best part of this recipe is it looks just like mud! When I told my kids that this was Timon and Pumbaa’s mud chicken recipe, they were all in I don’t know that they would have tried chicken mole otherwise. Everyone ate all their food and delighted in the fact we had mud for dinner. It was a huge hit!
Timon and Pumbaa’s Mud Chicken (Chicken Mole)
- 4 boneless, skinless chicken breasts
- One 28-ounce unsalted whole tomatoes
- 1/2 onion
- 1 dried pasilla-ancho chile, stem removed
- 2 chipotle peppers in adobo sauce
- 1/4 cup unsalted almond butter
- 1/3 cup raisins
- 3 garlic cloves
- 2 tablespoons olive oil
- 3/4 teaspoon ground cumin
- 3/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 ounces unsweetened baking chocolate
- 2 teaspoons cocoa powder
Place chicken in a crock pot.
Add all ingredients to a blender except the chicken, baking chocolate and cocoa powder. Blend well. Pour sauce over the chicken in the crock pot.
Cook on low for about 6 hours.
When chicken is cooked through, heat the baking chocolate in the microwave for 1 minute. Remove and stir until all the chocolate has melted. Sift cocoa powder over the sauce and add the melted chocolate. Stir well, breaking up the chicken into large chunkcs as you stir.
Serve with tortillas, rice and beans.
