Tiny Stars & Peas Pasta Please!

At first glance you might think this looks like a risotto but if you look closely you’ll see that those are actually tiny little stars. My kids adore Pastina or Stelline {tiny stars} pasta. They ask for a box of them everytime we’re in the pasta aisle. And why not, they’re adorable and fun to eat. They’re made in a similar way to risotto giving them a rich and creamy flavor. They’ll have your kids asking for more tiny stars and peas pasta please ; )

Note: Make sure your broth is warm prior to adding to pan. I usually make my own broth from a bouillon. It’s budget friendly and quick.

Stars & Peas Pasta
What you’ll need:
1 tablespoon olive oil
1 small onion – minced {approximately 1/4 cup}
1 cup frozen peas
salt/pepper
2 cups chicken broth – warm
1 pound Stelline or Pastina pasta
Parmigiano Reggiano – grated – optional to garnish

What to do:
1. Into a large saute pan add oil and onion. Cook over medium heat until onion is softened. Add frozen peas. Season with salt/pepper. Stir to combine. Cook approximately 1-2 minutes until peas have warmed.

2. Add chicken broth. Increase heat to medium-high and bring to a boil. Add pasta. Reduce heat to medium-low. Stir to combine.

3. Cover and cook for approximately 4-6 minutes until pasta is cooked through and a creamy sauce has developed. Stirring occasionally.

4. Check for seasoning, add additional salt/pepper if necessary. Fluff with spoon prior to serving. Garnish with freshly grated Parmigiano Reggiano if desired.
