Who: Kathy Strahs, mother of two living in San Diego, California
Why we love this blog: This mama knows her way around a sandwich. Just check out her brie, basil, bacon and blue panini if you don’t believe us. Strahs’ sandwich-centric blog, unsurprisingly, contains more recipes for sandwiches than you ever thought you’d need, but it’s also packed with new ways to use a panini press. (Shrimp tostadas, anyone?) On top of writing the Panini Happy blog, Strahs also has her first cookbook coming out later this year, and she runs Cooking on the Side, a blog dedicated to recipes printed on the side of food packages.
