Who: Sarah Matheny, a mother of two daughters based in Salem, Oregon
Why we love this blog: Spicy squash nuggets with honey lime dipping sauce? We were skeptical at first, too. But true to form, Matheny’s recipe is surprisingly delicious as is nearly everything on this site. With her second cookbook coming out soon, Matheny continues to provide meals the whole family can jive to, but she also pushes families to adventure into tastes unknown. Some of the most loved recipes on Peas and Thank You include spicy African peanut stew, zucchini quinoa lasagna, and Matheny’s you’ll-never-miss-the-meat vegan sloppy Joe’s.
