Triple Chocolate Zucchini Quick Bread

It’s zucchini time again! If your garden is overflowing with this great, green veggie, here’s a truly delicious way to use up all that bounty! A chocolate cake mix combined with shredded zucchini, chocolate chips, and gets a schmear of a simple, homemade chocolate iced glaze for sheer and utter perfection!

Triple Chocolate Zucchini Quick Bread

  • 1 box chocolate cake mix
  • 3 eggs
  • 1 1/2-2 cups shredded zucchini
  • 1 teaspoon vanilla
  • 3 teaspoons butter, melted
  • 1 cup chocolate chips
  • 1/4 cup sugar
  • 2 cups powdered sugar
  • 1/3 cup cocoa powder
  • 2 tablespoons corn syrup
  • 1 teaspoon vanilla
  • 1-2 tablespoons milk

Preheat oven to 350 degrees. In a large bowl, combine the cake mix, eggs, zucchini, vanilla, butter, chocolate chips, and sugar together until well mixed. Spoon into two standard-sized loaf pans sprayed with nonstick baking spray (the sort with flour included).  Bake for 45 minutes, or until the center of the bread is set. Remove and cool completely before turning bread out of pans.

In a small bowl, mix together the powdered sugar, cocoa powder, corn syrup, vanilla, and milk to make a frosted glaze for your bread. Smooth over cooled bread. Allow to set before slicing, serving, and enjoying!
