I can’t believe it took me this long to make these: a couple of steps and you have a supper-enhancer that makes so many dishes better and also lasts for weeks. Not only are they great on tacos, but from scrambled eggs to chicken and rice, they just give everything an extra pow! If your kids like pickles and things, they’re going to love these; and, the science-experiment feel of placing them in a jar and watching the onions turn a gorgeous magenta color, makes this a recipe they might even want to participate in.
