I didn’t mean to take the bite out of it before I took the picture. The problem is I got so excited assembling it that I couldn’t help myself. It’s just a regular ciabatta roll (in my mind, the perfect size sandwich) with turkey, sharp cheddar, thinly-sliced apples, and honey-mustard. (It’s also fine with regular grainy mustard if you don’t have any honey-mustard leftover from the 80s.) My daughters both love it packed in a brown bag for school and camp, and it’s a big fave on the weekend lunch circuit. If you have a panini or waffle iron, it benefits from some heat, too. Just make sure the cheese is touching the bread so it sticks.
