I bought a roll of frozen biscuit dough at Trader Joe’s a few weeks ago, and every time I’d open the freezer door, there it was staring at me. I waited for inspiration to strike — I have two biscuit-crazy kids and I’m always looking for ways to use that to my advantage. It came to me last weekend. I served these sandwiches — turkey, thinly sliced apples, sliced cheddar with honey mustard — to the girls and a few friends who came over after soccer practice. They were delicious, yes, but also I found that they are the perfect size lunch for little kids. One biscuit split in two was enough for an entire sandwich. Next time, I’m trying ham.
