V for Victory and Vegetables

Today, being another another snow day, meant another day of indoor play until the storm blew past us, so I decided to play a game I called V for Victory and Vegetables.

I told the kids that we were going to play the game V for Victory and Vegetables until the wind slowed down. Then we would go out to play and make snow cream, but we needed to fill up on some some good vegetables first…Victory!

Naturally, we started out with some basic vegetables and added reduced fat ranch dip etc. on the side, but then I started thinking more generally about fun ways to present vegetables to kids. Here are some of the ones that grabbed my attention:

Roasted Red Pepper Soup

Three-Bean Chipotle Chili

Roasted Edamame
