New Twist on the Oatmeal Cookie: Almond Butter and AppleOle & Shaina Olmanson
For the love of oatmeal: vegan oatmeal apple butter cookies with apples. I love oatmeal cookies. I gravitate toward them when given the choice and always have. Forget the chocolate chip and hand over the oatmeal.
However, when I’m looking to get away from my everyday oatmeal and raisin, I usually get stumped. Sure, you can trade the raisins for chocolate chips, add a few nuts to the party, but it’s the same cookie. So this time around we tried our hand at almond butter and apples for a change, and a happy change it was.
Vegan Oatmeal Almond Butter Cookies with Apple

1/2 cup canola oil
1/2 cup almond butter
1 cup sugar
1/2 cup brown sugar
1/2 cup coconut milk
1 teaspoon vanilla extract
2 cups rolled oats
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 apple, finely diced
Preheat oven to 350 degrees F. Cream together oil, almond butter and both sugars. Slowly beat in the coconut milk and the vanilla extract. In a large bowl whisk together oats, flour, baking powder and salt. Add to the wet ingredients and mix until incorporated. Stir in diced apples.
Using a medium scoop, scoop dough onto lined cookie sheets. Bake for 12-15 minutes until golden brown. Allow to rest for 15 minutes until firm.
Makes 2 – 2 1/2 dozen.
