Veggie Box: Easy Green Globe Squash Chips

In our veggies were these adorable balls of squash. I used them in the mac and cheese, and they were delicious. I wanted to try making something that didn’t have other of ingredients standing in these tasty squashes’ way. Green Globe Squash Chips

2 green globes squash, sliced into thin pieces — 1/8 of an inch

cooking spray

1/4 cup (at most) Italian seasoned breadcrumbs

Preheat oven to 400 degrees F. Spray a baking sheet with cooking spray and spread out the squash chips. Spray the chips with cooking spray and sprinkle lightly with breadcrumbs, flip the chips over and repeat. Cook for 10 – 12 minutes or until golden and crisp. Serves two hungry post-school kids!
