I’ve gotten really into making ice cream bread this summer. It is so easy and so delicious! It is a little less sweet than regular cake so sometimes I add a touch of extra sugar to make it taste like a real cake. The other day I took my regular method for making ice cream bread and made these funky cupcakes instead. I dyed the dough a few fun colors, swirl it together a little bit and baked them up! To complete the deliciousness I topped them with whipped frosting and sprinkles. Then we ate them up after dinner. They were such a fun treat for a summer day!
Tie-Dye Ice Cream Cupcakes for Summer
2 cups vanilla ice cream
1 1/2 cups self-rising flour
1/2 cup granulated sugar
Food coloring paste
1. Preheat the oven to 350 degrees F. Line 6 cups of a regular muffin tin and set aside.
2. Stir together the ice cream, flour, and sugar until it all comes together in a stiff batter. Then divide the batter into three equal parts. Dye each part a contrasting color.
3. Layer the batter into the muffin tins and draw a knife through the colors a few times to mix them up. Bake for 20 minutes, or until a cake tester comes out clean!
