The other day my friends and I were discussing preferred morning beverages. I love iced Chai lattes and one of my friends loves espresso. The only problem is that a hot espresso can be a little much on a steamy summer morning. I proposed the idea of making a delicious espresso granita instead. Espresso, frozen in a baking dish, shaved into a cup and topped with whipped cream would be the perfect cool alternative to her favorite hot drink. I was curious to try it myself so I whipped up a small batch one night after my daughter went to bed. The next morning I indulged in a sweet cupful of espresso ice. It had all the flavor of espresso without the physical heat, the perfect way to start off a summer day.
Easy Espresso Granita
2 cups fresh espresso
1/2 cup granulated sugar
1. Stir together the espresso and sugar until the sugar is dissolved. Pour it into a shallow baking dish, cover with plastic wrap and allow it to freeze completely.
2. Once the espresso is completely frozen use fork tines to scrape it into a large cup and top with whipped cream.
