Watermelon Ice Cubes

My kids are huge watermelon lovers, lately they get all excited when I use a melon baller to make little watermelon balls. It’s easy, just a cut a watermelon in half and use a melon baller to make tons of round bite size pieces. I notice after making the balls I’m left with a ton of juice and some leftover flesh. I usually divide it between two glasses for the kids to drink. Yesterday my daughter had the brilliant idea of creating a watermelon smoothie and in order to to this we would need to freeze it. We poured the leftovers into ice cube molds and froze it. Instead of blending them up to create a smoothie, we decided to add then to a glass of lemonade. Mmmm, so good and summery. I cannot wait until we carve up our next melon so we have more ice cubes!
