Watermelon Kiwi Smoothie

We make smoothies year-round – generally out of bananas, yogurt and frozen berries. During the summer months watermelon becomes my favourite smoothie ingredient – its high water content makes it easily blendable, it has that wonderful summery flavor, and watermelon is high in lycopene, that same antioxidant that gives tomatoes their red hue.

Sweet watermelon and tart kiwi blend perfectly with velvety vanilla yogurt for a deliciously smooth breakfast or a refreshing afternoon snack.

Watermelon Kiwi Smoothie

2 cups seedless watermelon chunks
2 kiwis, peeled and diced
2 cups vanilla yogurt
1 cup ice

Sprigs of fresh mint for garnish (optional)

Place ingredients in a blender and puree until smooth. Pour into 2 glasses and garnish with a sprig of fresh mint.

Makes about 4 cups (1 L).
