Weekend Baking: Tate's Bake Shop's Carrot Muffins

By aggieskitchen |

My kids absolutely love it when I bake them muffins. It might be considered weird if they didn’t I suppose. I don’t bake very often but when I do, it’s usually a muffin. I love that muffins can usually be put together in one bowl and with minimal effort. I’ll admit, I am a lazy baker.

I’ve made these Carrot Muffins from Tate’s Bake Shop Cookbook many times and they always turn out delicious. The smell that fills my kitchen when I bake these is full of warm sweetness and the smile on my children’s faces when they see them on the counter makes my heart smile. If you are in the mood for baking this weekend, give this muffin a try.

These Carrot Muffins are for the carrot cake lovers in your life. Add some shredded coconut and cream cheese frosting to make them a little extra special. You can find the recipe for Tate’s Carrot Muffins over on my blog Aggie’s Kitchen.
