Kids big and small are sure to love these three quick recipes for creamy summer popsicles.
I scream, you scream, we all scream for… popsicles! I know that’s not the way the song goes, but if there’s one healthy treat that always has my kids screaming for more (politely, of course), it’s naturally sweet, 100% fresh fruit frozen on a stick.
Any time I’ve got over-ripe fruit sitting around, I let my kids get involved in the fun of transforming it into a delicious dessert by tossing it in the blender and pulverizing it! Mangoes, peaches, pineapple, strawberries….almost any fruit you’ve got on hand will work. And since there’s no cooking involved, it’s a perfectly safe activity to let kids of almost any age take part in. Whether you let them break bananas in half, press buttons on the blender or pour puree into the molds, it really gets little ones excited about being a part of the entire cooking process. Within hours they get to see the results of their hard work when you slide these tasty treats out of the mold and into their hands.
So, open your fridge, see what fruit you’ve got on hand and make something super fresh and healthy for your family to enjoy. You can do it all summer long!
1 Pint Raspberries
3 Tbsp Agave
1 7 oz. Containers Greek Yogurt (I used 2%, but you can use 0% or whole milk yogurt)
1/2 Cup Milk (I used vanilla rice milk)
1. Place all the ingredients in a blender and puree until smooth.
2. Pour the raspberry mixture in the popsicle molds.
3. Freeze for 4 hours or more.
These popsicles are so easy to make and a perfect activity for kids to take part in. All you have to do is let your kids put the ingredients into the blender, turn it on, pour the mix into molds and freeze. Incredibly creamy. Great for kids that are vegan or can’t have dairy or gluten. Makes 8 popsicles.
1 13.5 Oz Can Coconut Milk (you can use regular or light)
2 Cups Fresh Pineapple or 1 14 Oz Can, drained
1. Pour ingredients into a blender and puree.
2. Pour into popsicle molds and freeze at least 4 hours.
Strawberries are packed full of vitamin C and ellagic acid, believed ¨to be help prevent cancer. The allergic potential for strawberries is high, though, so make sure to only give these to kids over the age of one without a history of food sensitivities. As always, ask your doctor first if you have any concerns. Makes 12 Popsicles.
2 1/4 Cups Strawberries, stems removed
1 Tbsp Lemon Juice
1. Place the strawberries and lemon juice in a food processor or blender and puree.
2. Pour several tablespoons into the individual molds. (Follow the manufacturers directions for your mold).
3. Freeze overnight (or a minimum of 4-5 hours).
*If your berries aren’t very sweet, you can add agave to sweeten them up a bit!
