Werther’s Caramel Ginger Popcorn
1 bag of lightly salted microwave popcorn popped
2 tablespoons butter
25 Werther’s original chewy caramels
2 teaspoon fresh grated ginger (here’s the best way to peel ginger)
Preheat oven to 225 degrees. Lightly spray a baking sheet. Pour the popcorn into a large bowl, remove any un-popped kernels. Place butter in a small sauce pan and add the fresh ginger. Cook over medium low heat until melted, add the 25 caramel pieces. gently stir until caramel is completely melted and blends with the butter to form a smooth mixture. Pour half the caramel over the popcorn and stir, then pour the other half of the caramel and continue to stir until evenly dispersed. Pour onto baking sheet and spread out. Bake for 15 minutes, stir, then bake for another 15 minutes. Remove, allow to cool just enough to eat. Store in an airtight container.
