The Super Bowl 2011 kickoff (Super Bowl XLV) will probably occur a little after 6:30 p.m. Eastern Standard Time on February 6, 2011. This year’s game will be the Pittsburgh Steelers vs. Green Bay Packers. For halftime, the Black Eyed Peas will be performing. This year’s game will be at the Cowboys Stadium in Arlington Texas. If you’re like me, and don’t have tickets to the big game, you’ll be enjoying it at your home, or a friend’s with a very large television. For the game, you’ve got to have lots of spicy and tasty dips to serve your guests. This buffalo chicken dip is a perfect homemade delicious recipe. I took the original recipe that consists of lots of pre-made ingredients like canned chicken and bottled salad dressing and changed it into a more fresh homemade version. I included 1/4 cup hot sauce in my recipe, which is spicy, but not too spicy. If you like a lot of heat, add 1/2 cup or more to taste to get a really spicy dip. This dip is a fun way to enjoy the yummy flavors of hot wings with blue cheese dressing without the bones. I serve this dip with lots of fresh celery, carrots and chips or tortilla chips.
Buffalo Chicken Dip Recipe
8 oz crumbled blue cheese
1 cup mayonnaise
1 cup sour cream
1/4 – 1-2 cup hot sauce, depending on how hot you like it
1 clove garlic, grated
1 teaspoon Worcestershire sauce
2 lbs cooked and shredded chicken
celery, carrots and crackers for dipping
1. Prepare chicken by poaching. Place chicken in a saucepan and cover with chicken stock. Bring to a boil and cook over medium heat until no longer pink. Remove and let cool, then shred with a fork.
2. Preheat oven to 350 degrees. Place all ingredients except chicken in a large mixing bowl. Add 1/4 cup hot sauce for a milder sauce and 1/2 cup for a hotter sauce. Mix well. Fold in chicken. Pour into a baking dish and bake at 350 degrees for 25 – 30 minutes or until lightly browned and bubbly.
3. Serve with celery , carrots and crackers for dipping.
