White Chocolate Peanut Butter Buddies

By Brooke McLay |

My kids are big fans of the Chex Mix Muddy Buddies. A bit of peanut butter, some chocolate chips, and powdered sugar comes together in an incredibly easy recipe. But sometimes you want a little sumpin’-sumpin’ different from the classic. So, to switch it up a bit, we tossed Chex Mix into a briliantly delicious batch of white chocolate melted together with peanut butter, and made these delicious Snowy Buddies! A great snack for afternoon, brown bag lunches, and midnight noshing!

9 cups rice Chex cereal
1 cup white chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 1/2 cups powdered sugar

In a small microwavable bowl, zap chocolate chips, peanut butter and butter for 1 minute; stir until smooth. Microwave about 30 seconds longer if needed. Drizzle mixture over cereal, stirring until evenly coated. Spread on a piece of parchment paper and allow to cool until the chocolate has harded.
