School has started and I’m already in a breakfast rut. I was looking into my cupboards for something to make and I just kept eyeing these fruit squeezers and fruit cups when it hit me. Create a healthy muffin that will give my kids the boost they need in the morning while sneaking in some fruits and veggies. I made them after the kids went to bed so they could wake up to muffins, then I tried one. Then five, then my husband came in for some muffin action. We managed to save some for the kids, but these won’t last more than a day! Next time I’m doubling the batch.
Whole Wheat Mango Peach Muffins
1 cup whole wheat flour
1/4 cup almond meal
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup vegetable oil
1/2 cup non fat greek yogurt
1 teaspoon vanilla
1 pouch Del Monte Peach Mango Fruit Squeezer
1 Del Monte Mango Fruit cup
Preheat oven to 350 and either spray or line a muffin pan. Combine the dry ingredients. Create a well in the dry ingredients and pour in the wet ingredients, including the entire contents of the fruit squeezer and fruit cup. Stir to combine and spoon into muffin pan. Cook for 18-20 minutes or until toothpick comes out clean. Makes 12 muffins.
