Winter Salsa: A Simple, Spicy Superbowl Snack

With the Superbowl right around the corner, I’ve been pulling together a few of my favorite snacks, thanks to one of my favorite organic snack companies, Garden of Eatin’.  In honor of the big game, we’ve stocked our pantry with all sorts of their chips.  It’s nice, when friends come over to watch the Superbowl, to know that we can feed them a few indulgences that are actually delicious and healthy.  For instance, this ridiculously easy Winter Salsa, which can be pulled together in minutes, is an ideal game day treat.  I plan to pull the ingredients out right before kickoff, blend them together, then serve a fresh heaping bowl of salsa and chips for our party guests.  Delicious, nutritious, and totally perfect for the big game.  Now that’s something to cheer about! 

Winter Salsa

  • 2 (15 ounce) cans diced tomatoes
  • 1/2 purple onion, diced
  • 2 cloves garlic, chopped
  • 1 jalapeno, chopped (if desired)
  • 1/2 cup cilantro, chopped
  • 1 bag Garden of Eatin’  Blue Corn Tortilla Chips

In a blender, combine one can of diced tomatoes, the onion, garlic, jalapeno and cilantro, then blend until coarsely chopped.  Pour into a large bowl and stir in the remaining diced tomatoes.  Salt & pepper to taste.  Serve with Garden of Eatin’ Blue Corn Tortilla Chips.
