When the temperature get a little chillier I love to make hot soup for dinner. Lots and lots of hot soup. It is like a delicious, healthy comfort food that always comes through. Some soups I have plenty of time to pull together and even make them in my slow-cooker. However, other times I don’t have a lot of time to cook everything from scratch. I’ve just got to get the soup made, heat it up, and it is chow time. One of my favorite super-fast soups is this pea soup. The main ingredient is frozen peas. The rest are a few ingredients which happen to be vegan (I am not vegan, but I adore this soup!). They all get piled into the blender, blitzed once, and then warmed on the stove. If I am really in a hurry it can get warmed up in the microwave. I called it the World’s Easiest Blender Pea Soup because, well, it is!
World’s Easiest Blender Pea Soup
Serves 2 to 4

16 ounces frozen peas, lightly steamed in the microwave for one minute
1 cup almond milk
1 pinch kosher salt
1/2 cup water
2 tablespoons lemon juice
Garnish ideas (mostly non-vegan): Sour Cream, Creme Fraiche, Croutons, Chive oil, Mint oil
1. Place all of the ingredients in a blender and puree until smooth. Then, pour the soup into a saucepan and gently warm over medium heat. Pour into bowls, garnish with topping of choice and enjoy!
