Lemon Kiwi Coco Bars
vegan, makes about 12 bars
1 1/2 bananas
1 cup virgin coconut oil
1/3 cup agave syrup
1/8 tsp salt
1/4 cup lemon juice + a few pinches zest
3 kiwis, peeled
crust: raw hemp seeds or crushed graham crackers
1. Add add ingredients – at room temperature – to Vitamix or food processor.
2. Blend until smooth.
3. Add crushed grahams or raw hemp seeds to a coconut oil greased square dish.
4. Pour lemon kiwi mixture over top crust.
5. Place in freezer for about 20 minutes for fast-chill method. Or place in fridge until firm enough to slice.
