Happy Birthday, Kate Gosselin! She Celebrates With a New Cookbook!

gosselin cookbookThe mom of eight is 38!

Kate Gosselin turned another year older today (March 28), and honored the occasion by announcing her newest project: her first cookbook.

Love Is in the Mix, set for release in September by HCI Books, features more than 100 of the reality-star mom’s favorite family-friendly recipes. (Some examples: Very Sloppy Joels, Cara and Mady’s Crock Pot Pulled Pork and Healthy Eggplant Parmesan.) The book also contains photos and anecdotes about the Gosselins’ favorite traditions.

So how did the chef- birthday girl celebrate her big day? By letting someone else do the cooking.

She tweeted tonight: “For the 1st yr ever, we went out for dinner for my birthday and I BOUGHT myself a cake=no cooking, no baking, no clean up!”

Kate also took the time to reflect on the things for which she’s thankful on this important day. Her full list appears on her website, but here’s a sampling:

The first eight blessings on her list, of course, are her 12-year-old twins Madelyn (Mady) and Cara, and eight-year-old sextuplets Alexis, Hannah, Aaden, Collin, Leah and Joel.

Despite the bumps in her life’s road – her very public divorce from ex Jon, for instance – Kate feels blessed by her life experiences to date. “Good or bad, everything we face in life teaches us something and prepares us for a better future,” she writes.

Not surprisingly, Kate lists cooking and running (she has competed in several marathons) among her joys, along with her chicken barn, driving (it allows her to “calm down, listen to music and solve problems”), sleeping in on weekends (“there are just not enough of these ever”) and that old mom standby – coffee!

And on a more spiritual level, this mother of multiples is especially thankful for God (“Our shield and our shelter!”) and for her optimistic nature. “It’s taken me most of my life, but I choose and will always choose the ‘half full’ approach,” Kate says.

Happy 38th!
