When the weather begins to warm up, there’s something in me that begins to crave lighter and healthier foods. After a long winter of eating lots of heavy, comfort foods, spring is the perfect opportunity to get back to fresh and clean eating.
Combining fruits and greens together takes an ordinary, everyday salad to a gourmet experience. When you take a little bit of extra time to put together a delicious salad, complete with toppings and homemade dressings, rather than just dumping out a bag of lettuce and squirting on some dressing, you’ll take your meal from ho-hum to fabulous!
You can prep the ingredients ahead of time, slice the strawberries, chop the nuts and make the dressings. Homemade dressings always taste better after sitting in the refrigerator for a little while anyway, allowing the flavors to meld together. Then these delicious salads are a breeze to throw together before dinner!
Spinach and Strawberries: Two Delicious Salads
Strawberry, Cucumber, Spinach Salad
- 1 pound strawberries, sliced
- 1 bag (8 oz.) spinach
- 1/2 large, or 1 small, cucumber, peeled and diced.
- 1/2 cup slivered, or chopped, raw almonds
Slice the strawberries, peel and dice the cucumber, chop the almonds. Combine ingredients in a salad bowl and toss together.
- 1/4 cup plain yogurt
- 1/4 cup lemon juice
- 2 Tbsp. olive oil
Whisk above ingredients together until smooth.
- 1 Tbsp fresh basil, finely chopped
- 2 tsp. honey, to taste
- salt and pepper
Chop the basil into fine pieces. Add basil, honey, salt and pepper to dressings and whisk together. Check flavor and adjust to taste. To help flavors meld together, chill in the refrigerator until ready to serve.
Drizzle dressing over salad to taste and toss to combine. Serve and enjoy! *Adapted from Cafe Johnsonia
Simple Strawberry Spinach Salad
- 1 bag (8 oz) spinach
- 1 pound strawberries
- 1/2 cup chopped walnuts
- 1/2 cup crumbled feta cheese
Slice the strawberries and chop the walnuts. Toss ingredients together in a salad bowl.
- 1/2 cup honey
- 1/2 cup olive oil
- 1/4 cup red wine or apple cider vinegar
- 1/4 tsp. Worcestershire sauce
- 1/4 tsp. pepper
Mix all the dressings ingredients together in the blender until smooth, and store in the refrigerator until ready to serve. Pour over salad to taste and toss to combine.
