Now that I am juggling homeschooling, outreach activities, freelance writing, and being a mom, wife and friend, I feel overwhelmed and spent, a feeling that peaks pretty much everyday at around 4 p.m. I love cooking – it’s an artistic outlet for me since I don’t have time to paint – but as of lately, I have no energy for it.
If your crock pot is sitting in the corner of the kitchen closet (and you’re feeling stressed out, too), it’s time to bust it out because these recipes are amazingly easy and good!
I once had a slow cooker collecting dust because it was such a foreign concept to me. I never used it because I thought I needed to plan days ahead for a crock pot meal (I don’t plan my meals — remember, it’s an artistic outlet). Well, once I realized that wasn’t true, I now use it at least once a week. I used to think that I had to thaw out my meat a day ahead so I could have it ready to stick in the crock pot in the morning, but then someone told me you can stick a frozen chicken in the crock pot and it worked.
