Cinco de Mayo Dessert: Margarita CupcakesMari Hernandez-Tuten
I must confess, after 30 plus years of being Mexican, I only recently tasted my first margarita. I wasn’t avoiding them, but it just never stood out to me when I could have a piña colada or something fruity of that sort.
The verdict? I like margaritas! I like this Cinco de Mayo dessert: Strawberry Margarita Cupcake from The Baker Chick even more! Cinco de Mayo is the perfect excuse to enjoy all-you-can-eat Mexican food, from tacos, guacamole (I shared some great recipes over here), tres leches cake, cheese dip, churros and . . . I can go on and on.
These babies have a strawberry tequila filling, so you will want to keep this as an “after the kids have gone to bed” dessert. I’m not much of an alcohol drinker, and tequila would be the last thing on my list to order, but this filling sounds amazing. So I may just have to venture out to the liquor store and buy some tequila for the first time in my life.
