How to Make Rainbow Marshmallow Cookies

Spring time calls for some of the prettiest pastel colored treats. This year’s trend has been rainbow pastels. With Easter celebrations this weekend, I thought I’d whip up a yummy treat for the family to enjoy. I was inspired by my favorite Mexican cookie—Gamesa’s Arcoiris— made of marshmallow and coconut flakes. Arcoiris means rainbow so it was only right I share a rainbow cookie recipe.

This rainbow cookie is one of the easiest cookies I’ve ever made. Much like s’mores, this cookie calls for 3 ingredients. It also consists of a crunchy base cookie  with melted marshmallow. Doesn’t that sound delicious already?

    Whip up a batch of these cookies in less than 5 minutes!

    Ingredients
    Goya Maria Cookies, Coconut flakes, and Jet-Puffed FruitMallows (small marshmallows) Most of these ingredients were easy to find or very easy to substitute!
  • Load the Marshmallows 3 of 7
    Load the Marshmallows
    Place 4-6 marshmallows on your cookie. Get creative mix the colors up.
  • Heat your cookie in the micorwave 4 of 7
    Heat your cookie in the micorwave
    Heat your cookie for 10-15 seconds depending on your microwave. These can also be baked but must need to be watched constantly. Marshmallows puff up and melt fairly quickly!

    This is what your Marshmallows should look like when removed from heat. They should be sticky and puffy.
  • Add some flakes 6 of 7
    Add some flakes
    While the marshmallows are sticky add some coconut flakes. The amount to of flakes to add is really based on your preference.
  • Cool and enjoy! 7 of 7
    Cool and enjoy!
    The marshmallow will soon deflate. Check to be sure it is cooled before eating. Once cookie is cooled down enjoy!

  • Small marshmallows in rainbow colors – we used Jet-Puffed Fruit-Mallows
