One of my favorite no-cook meals is a simple 3 bean salad. Everyone has their own recipe, but if you’re domestically challenged like me, all you need to make culinary magic is three different types of beans and a jar of Italian dressing. In the past I’ve added tomatoes, fire-roasted red peppers, black olives and cilantro. How do you make yours?
I also swear by my taco dip. I bring it to any party that requires a dish to pass. Just smear a can of refried beans in the bottom of a caserole dish, add a layer of sour cream, salsa and sprinkle the top with cheese! Can be served warm or cold and used as a dip for crackers or tortilla chips or as a hard or soft taco filling. You can get as fancy or keep it as simple as you like, depending on the type of salsa and cheese you use.
