It seems that most of us are busier than ever these days. Has anyone else figured out why that is? I know for me it seems like hours meld into days meld into weeks before I even realize what's happening. So taking some time to slow down is a priority for me in 2013.
I am a pretty lazy cook. I used to eat a lot of take out and meals at restaurants until I discovered that cooking at home doesn't have to take more than 15 minutes. And, the best part is that it's a lot healthier! Basically, I make a list of my current favorite ingredients that are in season and that I am excited about and then I think of different ways to mix them up! Recently, I made this salad with organic baby greens, clementines, coppa, green olives, avocado, a dollop of creme fraiche and a dash of olive oil and balsamic. It was so easy and took just about 5 minutes. Here's another favorite, that kids might even love (I loved juicy eggs as a kid!).
I cried about the weather for the first time this year today. For the past few days it has been dreary, cold and windy here in Indiana and I can only handle so much before I start to question why I live here and not somewhere with constant sunshine and warm sandy beaches. I know it's only temporary but if your sunshine starved soul has ever been trapped under dreary gray skies for any amount of time you'll understand where I'm coming from. I feel as though I have been muddling through a great majority of my life the past month and the lack of fresh air and sunshine is starting to wear me down. Thankfully it's not just me that feels overwhelmed by the gloomy cold, it seems that February and March are pretty terrible months for a lot of people.
