Hi guys, it’s Huck! We’re gonna talk some more about food today. I’m sharing another one of my favorite recipes!
BLACK BEAN BURGERS
(Mom serves these to me without the buns, and with a little bit of green bean on the side. Yum!)
1/2 onion, diced
2 cloves garlic, minced
1tsp dried oregano
2 cups canned organic black beans
1/2 cup organic corn
1/2 cup whole wheat bread crumbs
1/4tsp cumin (you can skip this is your toddler doesn’t like spice!)
2tsp chili powder (you can skip this too!)
Add all ingredients to a mixing bowl and mix to combine. Press into patties, and cook on a skillet over medium heat until cooked through, about four minutes per side.
Delicious, and full of protein and fiber!
