Easy Meat-Free Tacos
1 tablespoon olive oil
2 cups black beans OR 2 cups sliced zucchini OR 2 cups meatless crumbles
1 packet Old El Paso Taco seasoning
3 tablespoons veggie broth
1 box Old El Paso Taco Shells
1 cup shredded cheddar
1 cup shredded lettuce
1 cup tomatoes, diced
1 avocado, sliced
In a skillet, heat olive oil over medium-high heat. Place black beans, zucchini, OR meatless crumbles into skillet. Sprinkle with Old El Paso Taco Seasoning and veggie broth. Cook just until the seasoning is reduced and sticks on your bean or zucchini or crumbles. Remove and spoon into taco shells. Serve with your favorite taco fixins and enjoy!
