3-Ingredient Dinner: Zucchini Parmesan Boats

These zucchini boats are a fun and tasty dish for summer. You can grill or bake them, depending on how hot your want your kitchen to be. Since you can prepare the zucchini ahead of time, this time-saving recipe makes a great entree or appetizer on a busy evening. A perfectly delicious, completely simple 3-ingredient dinner. 3-Ingredient Zucchini Boats
2 zucchinis, sliced in half down the center
1/2 cup parmesan
1/2 cup cherry tomatoes, sliced thin
olive oil
salt and pepper to taste

Preheat oven to 400 degrees. Sprinkle zucchini with parmesan. Place cherry tomatoes on top. Drizzle with olive oil and sprinkle with salt and pepper. Place in preheated oven and allow to bake until the zucchini is tender and the parmesan is melted and light brown around the edges. Serve immediately and enjoy!
