Gooey Chocolate Cheesecake Brownie Bites
With the finest crispy crust on top, and a sweet gooey center, these little brownie bites are kinda like chocolate lava cakes, only a heck of a lot less finicky. Serve them warm, straight out of the oven. Or, if immediate serving is deemed impossible, by all means microwave them until warm and chocolately.
Ingredients:
2 eggs
4 tablespoons cream cheese
3/4 cup organic sugar
1/3 cup coconut oil, melted
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cocoa powder
1/2 cup spelt flour (or plainy plain plain flour)
1 1/2 cups semisweet chocolate chips
Directions:
In a stand mixer, combine the eggs, cream cheese, sugar, and coconut oil. Add the baking powder, salt, cocoa powder and spelt (or plain flour or white whole wheat flour. It’ll all work beautifully.)
Bake in an oven preheated to 350 degrees for 16-18 minutes, or JUST until the center of your muffins is set. Serve topped with ice cream and all your favorite sweet stuff.
