7 Tasty Ways to Spice up Your Breakfast with Salsa

Salsa may just be summer’s greatest condiment. I mean, who doesn’t enjoy sinking their teeth into a fresh omelet with a chunky tomato spread on top, or a quesadilla with a refreshing kick? I know I do! Usually I’ll snag my salsa straight from the store because making it at home can be challenging, not to mention time-consuming. I never seem to have all the ingredients in my fridge. The jarred stuff, on the other hand, is fuss-free and just as tasty and healthful. In particular, I dart for the medium-spicy salsa as it lends a kick to anything that’s usually ho-hum. Most of the time, though, I incorporate it into my eggs, which I make a million different ways all summer long.     Make a classic omelet by folding salsa into eggs. Top with a smattering of cheese, more salsa and serve!

    Scramble eggs with a touch of milk, and stir in at least 1 heaping tablespoon of salsa at the end. Drop the eggs into the center of a fajita, wrap, and serve!
