There is nothing quite as delicious as a peanut butter cookie. I LOVE peanut butter and a good peanut butter cookie is always the perfect treat for me. However, alas, as always, I can’t have as many as I would like. If I were allowed I would eat a dozen per sitting. But my body would never allow that. I would burst out of my clothes in an instant. Instead, I just make two and enjoy every single bite!
A Recipe for Two Peanut Butter Cookies
2 tablespoons unsalted butter
3 tablespoons packed dark brown sugar
¼ teaspoon vanilla extract
½ teaspoon kosher salt
2 tablespoons smooth peanut butter
1 large egg yolk
¼ teaspoon baking soda
¼ cup all-purpose flour
1. Preheat the oven to 350 degrees F.
2. Beat the butter, sugar, salt, and vanilla together. Stir in the peanut butter. Add the egg yolk and stir again. Then, stir in the baking soda and flour.
3. Roll the cookie dough into two balls, roll them in granulated sugar, and place on a lined baking sheet. Bake for 8 to 10 minutes. Remove and allow to cool.
